Healthy Sweet Potato Brownies
This is one of my favorite recipes. Also my kids love this cake.
Ingredients:
– 20 pitted dates: pre-soak for 1/2 hour, discard water
– 700g (~25oz) sweet potato: peel, cube, steam
– 1 cup oats: grind into flour in food processor
– 2 Tbsp coconut flour
– 2 Tbsp coconut oil
– 5 Tbsp cacao or cocoa powder
– 1 pinch Himalayan sea salt

Preheat oven to 350 degrees F (175 degree C). Line an 8-inch (20cm) square glass oven dish with parchment paper.
Blend dates first, add all other ingredients and mix well in a food processor. You can already eat this as a pudding. If you can still resist it, spread batter in prepared pan and bake for 45 to 60 minutes. Let it completely cool before cutting.

If you want to add icing (picture is without icing):
Melt cocoa butter and coconut oil, add cacao/cocoa powder, some maple syrup and mix well. Pour over cake and let it cool. I never measure the ingredients for the icing, but it is always delicious. Enjoy!
